Narazuke daikon radish with a distinctive refreshing taste and texture.
Generally speaking, radish pickles include pickled radish, pickled radish, and pickled soy sauce, but this is daikon radish pickled in narazuke. It is also Narazuke made from a type of radish called ``White neck daikon'' rather than Green neck daikon.
It is characterized by denser fibers than the commonly seen green-necked daikon, and when made into Narazuke, it becomes a light-flavored Narazuke with a firm texture that is different from takuan.

This radish is grown by a contracted farmer in Kyoto City.
The main difference from green-necked radish is that, as its name suggests, it is entirely white. The reason for this is that it grows deep downward without sticking its head above the ground. As a result, it is difficult to dig out and harvesting is very hard work. We also come to help with the harvest when the season comes. Even though we are always careful about hygiene management, at times like this, we are completely covered in mud as we work.
It took about two years to harvest, pickle, and change the pickles several times. The joy of completing Miyako Nishiki Mirinzuke with daikon radish is also different from other products.
